After cooking GR’s slow roasted pork belly, I am interested to explore more of his dishes. I found this dish on the YouTube and more importantly my son enjoys it very much.

Fish en Croute
I am delighted to find this wonderful dish that has fish and vegetables wrap inside a puff pasty. I said to myself that I have to bake this dish for my family’s weekend lunch.
Here is the recipe for the fish en croute.
Pork and Mushroom Pie
One of my son’s favourite food is mushroom. Most mushroom pie recipes ask for beef. Since I don’t eat beef, I replace it with pork. This delectable warm and creamy dish is best served with some roti prata for my family’s lunch.
Here is my recipe
Pork and Beer Cobblers
This another hearty one dish meal prepared for my family lunch. I stewed the pork and vegetables with beer one day ahead. Then I baked it with the cobblers the next day. A wonderful and fulfilling dish for serving a crowd. Inspired by Caroline Bretherton’s Beef and Ale Cobblers.
Here is the illustrated recipe for this cobbler dish.
Whoopie Pies
This dessert was specially requested by my son to bake. It is a classic American dessert which has another name called the Big Fat Oreo.
Here is the recipe for this super big Oreo pie. Adapted from Step-by-Step Baking by Caroline Bretherton. (I have increased the amount of flour and reduced the butter content from the original recipe).
Spinach & Feta Filo Pie
Filo sheets are paper-thin sheets of unleavened flour dough used in the Middle East. This delicious vegetarian pie is made with spinach, feta cheese, onions, dried apricots and pine nuts. It’s a type of Mediterranean or Greek cuisine.
Below are my step-by-step recipe for this healthy and attractive Mediterranean dish.
